Process of making tasty hot sake

Today, continuing from our previous blog, we will explain how to make the delicious hot sake you have been waiting for! The most important thing is not to overheat sake, since sake is a delicate alcohol, even in the process of warming it up.

  1. Fill the sake to the 9th fill of the jug.
    Wrap the spout of the sake jug with plastic wrap to prevent the good aroma of sake from escaping.

  2. Prepare a pot, fill it with water, and immerse the sake jug in the pot.
    The amount of water is enough to fill the sake jug halfway to the top.

  3. Remove the sake jug and heat the water in the pot until it comes to a boil, then turn off the heat.

  4. Soak the sake jug in the pot after turning off the heat.
    The alcohol in the sake will be dissipated at 78°C (158°F).
    The trick is to heat it as quickly as possible (about 3 minutes), since the alcohol component will also be gone by heating it for a long time even below 78 degrees.

  5. The approximate temperature of hot sake is 50°C (122°F) when it feels slightly hot when you place your middle finger on the bottom of the cup.

For microwave heating

Microwaving is not recommended as the temperature suddenly rises, but if it is difficult to prepare a pot, cover the mouth of the sake jug with plastic wrap and heat it.

Tips for microwaving well

・Warm it up for 20 seconds, remove it from the microwave, shake the sake jug to equalize the temperature inside, and microwave it again for another 20 seconds. Repeat until the desired temperature is reached.
